Rough Choc Mint Fudge Bites

You guys - this recipe is SO GOOD, and SO SIMPLE! It's dairy free, sugar free, vegan and delicious! These little fudge bites make for an excellent 3pm chocolate fix - but without the guilt!


1 cup of activated Almonds or Cashews (soak overnight or for 8 hours and drain)

5-8 soaked Medjool Dates

1/4 cup of Oats

1/2 cup of Coconut Oil 

1-3 tablespoons of Stevia

3-5 drops of Young Living Peppermint Essential Oil 

1/2 cup of Cocoa Powder (if you'd like a less chocolate-ty taste then use only 1/4 cup). 

Combine all ingredients in a high-powered blender or food processor and blend until smooth. Spoon mixture into a plastic container (line this container with baking paper for easy removal of the fudge later!) and allow to set in the freezer. Once set, remove from freezer, chop into small blocks and serve!
